Cider & Wine

13 ˚Brix Cider Bistro serves our libations by the glass or bottle, with Forbidden Fruit Hard cider available for purchase by larger amounts for guests to enjoy at home. Our ciders come from locally and national sourced fruits and are produced and bottled in Palisade, Colorado. Varaison Vineyards and Winery creates European style wines that are excellent accompaniments to the scenic Colorado feel. Sample the cider menu at the Bistro tasting room, and indulge in a perfectly paired meal. Wine tasting is available at Varaison Vineyards and Winery.

Cuvée Blanc Chardonnay

Ripe melon, apple, and pear flavors and aromas dominate this un-oaked wine with a expression of a bright acidity and smooth elegant finish.

Montagne Doux Viognier

Honeysuckle, lemon flower, and pear blossom dominate the top notes with rich ripe pear, apricot, and golden apple in the mid-palate, finished with French oak to add creamy vanilla, and an off-sweet finish.

Joyeux

The subtle notes of floral citrus, spice and exotic fruits frolic across the palate. Crafted from single varietal Mourvedre, this French-style rosé yields a deeply intricate and intriguing portrayal of a classic red wine grape from the southern Mediterranean. Enjoy every day by itself or with your favorite cheese, meat, fruit, and bread.

Barbera

Varaison Barbera initially presents a ripe red cherry and vanilla flavor. One year on French Oak provides an elegant finish with complex notes of fruit and spice. This wine pairs superbly with traditional Italian fare, spicy meat dishes, shellfish and cheese. Subject to vintage availability.

Primitivo

Primitivo is a dark purple grape that provides layered flavors of blackberry, cedar and fig. Extended barrel aging in our private cellar adds rich aromas of anise and vanilla. Often confused with Zinfandel, Primitivo's genetic roots extend into Croatia and Italy. This grape produces a long-aging, tannic red wine that pairs superbly with richly-seasoned foods and smoked meats. Subject to vintage availability.

Espérer, Sparkling Muscat Blanc

Espérer is that sparkling feeling inside which once released is inescapable and fathomless. Anticipate exotic aromas and captivating mouthfeel with each and every sip. Delicate sweetness, citrus, tropical fruit, honeysuckle, and a delicious brioche finish. Irresistible. Irrepressible. Incredible.
